Program Objectives

At the conclusion of the program, participants will:

  1. Understand how moving toward a plant-based diet positively affects children and families.

  2. Understand the health and nutritional aspects of vegetarian diets, including relationships between vegetarian diets and prevention of chronic diseases and conditions.

  3. Understand vegetarian nutrition and its impact on protein, calcium, vitamin B-12, zinc, and essential fatty acids.

  4. Understand the general guidelines to plan vegetarian diets for children and adults.

Brenda Davis, R.D.
Cutting Edge Vegetarian Nutrition for Infants and Children
Co-author of Becoming Vegetarian. Davis has led vegetarian workshops and lectures for dietitians and the general public and provided cardiology nutrition updates and workshops for physicians.

Course Objectives

  1. Identify the key nutrients of concern for infants and children who are raised on a vegetarian or vegan diet.
  2. List the key food sources for each of the nutrients of concern.
  3. Identify the appropriate and inappropriate milk choices for infants and children.
  4. Describe a vegetarian version of the food pyramid and state the number of servings required in each food group.
  5. Identify the potential disadvantages of very low fat diets for vegetarian/vegan children

Terry Shintani, M.D.
Let Food Be Your Medicine
Dr. Shintani is on the clinical faculty at the University of Hawaii School of Medicine and School of Public Health, and is the Director of Preventive Medicine at the Waianae Coast Comprehensive Health Center. His award-winning program has been featured in Newsweek, CNN, CBS, NBC and in the Encyclopedia Britannica.

Course Objectives

  1. Understand the relationship between modern diseases and the change in diet from that of ancient times.
  2. Understand why Native Hawaiians are obese today in contrast to their slim, athletic habits in the past.
  3. Understand why this high carbohydrate diet lowers blood sugar and reduces insulin requirements in individuals with diabetes.

Steve Masley, M.D.
Dietary Antioxidants Act as Anti-Aging Compounds
Dr. Masley is a family physician with Group Health Cooperative of Puget Sound. He is also a cookbook/nutrition author whose passion is cooking delicious, easy-to-prepare and healthy meals. His book, The 28-Day Antioxidant Diet Program offers healthful delicious recipes representing the best synthesis of cutting-edge nutritional science.

Course Objectives

  1. Learn how antioxidants impact aging and disease.
  2. Focus on ADDING specific antioxidant-rich foods and activity to enhance health and vitality.
  3. How medical providers can improve dietary compliance.
  4. Learn what supplements can and cannot do, and why plant-based foods out-perform supplements.

Judith Boice, N.D., L.Ac.
Make No Bones About It: Optimizing Bone Health
Dr. Boice is a naturopathic physician and licensed acupuncturist. She has written numerous articles and four books, including The Pocket Guide to Naturopathic Medicine. Dr. Boice created "The High Level Wellness Program," an eight-week course she developed to support individuals in achieving their personal life and health goals.

Course Objectives

  1. Understand the life-style factors that positively affect bone mineral including diet, exercise, and nutrient supplementation.
  2. Understand the effects of hormones on bone health.
  3. Identify which tests are most appropriate to monitor bone mineral density.

John McDougall, M.D.
Diet in the Treatment of Common Diseases
Dr. McDougall is author of several national best-sellers, founder and medical director of the renowned McDougall Program, and cofounder Dr. McDougall’s Right Foods, Inc.

 

Course Objectives

  1. Understand the causes of most chronic diseases in our society.
  2. Prescribe a treatment for patients with common chronic diseases in our society based on diet and life-style.
  3. Understand the economic benefits of keeping people healthy.
  4. Learn some practical means of following a healthy, plant-based diet.

Target Audience
This program is designed for physicians, dietitians, nurses, dentists, and
other health care professionals. To successfully complete the program and receive credit, participants must pay the required fee, attend the entire day, and complete the evaluation forms.

Accreditation

  • 6.5 hours Category 1 CME credit by Group Health’s Medical Education Department

  • 6 hours CPE credit for Dietitians (ADA)

  • Six CEUs for Naturopathic Doctors

Directions

From I-5 north or south, take Mercer Street exit, then right turn at first traffic light onto Fairview Avenue. Make an immediate left at the next traffic light onto Broad Street. Proceed about 2 /3 of a mile, and you will go underneath an overpass. Make a soft right (first right after overpass) onto Harrison Street. Make next right onto Fifth Avenue. Make a left onto Roy Street. Parking garage is one block down on the left side. Or take bus 1, 2, 3, 4, 6 or 16. The conference will be held in the Olympic Room of the Seattle Center’s Northwest Rooms, near the Key Arena.
